The stars of this show are (1) organic firm tofu, (2) fresh and delicious veggies, and (3) our homemade Thai cashew sauce (a super clean sauce made from whole cashews, ginger, dates, and coconut aminos).  We first marinade our tofu before sautéing it in cashew sauce with bell peppers, red onion, celery, carrots, Thai basil, spinach, scallions, and radishes. This delicious plant-based meal is served on a bed of rice noodles. Please note the dish is a bit spicy!

Ingredients:
Organic firm tofu, red and green pepper, red onion, celery, carrot, Thai basil, spinach, scallions and radish, rice noodles.
Cashew Sauce; Cashews, ginger, chili paste, coconut aminos, coconut sauce, dates.

Remove plastic cover from container and set aside any garnishes.

  • Oven: heat to 375 degrees. Bake for 15-20 minutes or until warm throughout.
  • Microwave: 2-3 minutes or until warm throughout.

Garnish and serve.
