Roasted Chicken with Spanish Chorizo, Sweet Potatoes, and Shallots
There's a reason slow-roasting is a thing, even in our fast paced world: it's delicious! Think rotisserie meets roasted, with the tenderness and juiciness of the rotisserie chicken plus the home-made flavors of the oven. We slow roast chicken that we get from our friends at TJ's Poultry Farm, which is only a few hours south of us. Their chicken is hormone and antibiotic free, and free-range! This delicious and protein rich main course will fill you up, but it's accompanied by more goodness: a bit of salty Spanish chorizo, vitamin-rich baked sweet potato, roasted shallots, and wilted kale. Top it off with the included side of balsamic reduction to get really fancy.
