In this dish we bring fresh, clean summer flavors of the Mediterranean here to Chicago! Light, flaky cod is served on a bed of roasted cauliflower, vine ripe tomatoes, fennel, artichokes, black olives, kale and onions. Made with a deep, rich-tasting olive oil to give it a true Mediterranean flavor.
Remove plastic cover from container and set aside any garnishes.
- Oven: heat to 350 degrees and bake for 10 minutes. Stir food, then continue to bake for 5-10 minutes or until warm throughout.
- Microwave: 2-3 minutes or until warm throughout.
Garnish and serve.
