This is a simple, lean, protein-heavy dish that will make for a perfect dinner or lunch any day of the week. We marinade and grill a hormone free chicken breast and serve it with a bright, tangy lemon-tarragon sauce. On the side are skin-on roasted red potatoes (we like it that way because the skin has all the good stuff for you!) and a blend of leafy greens: watercress, arugula, spinach, red oak and red dock.
Remove plastic cover from container and set aside any garnishes.
Oven: heat to 375 degrees. Bake for 15-20 minutes or until warm throughout.
Microwave: 2-3 minutes or until warm throughout.
Garnish and serve.
