This meal from Kerala in Southern India is a take on a traditional Thoran vegetable dish. Ours is one of many variations. We have chosen to do it as a salad and added popped amaranth for a unique culinary experience. The addition of the versatile chermoula, that we enhanced with tamarind, makes this dish sweet, tangy, and unctuous.

This dish is best when eaten cold or at room temperature. Remove plastic film from container, toss with dressing and enjoy!
