General Tso Cauliflower with Tofu
Disclaimer: There may be variabilities in cooking time based on equipment used. Always test for temperature until the meal is warmed to your liking. In microwave, heat up jasmine rice for two minutes. Mix tapioca starch and general tso sauce until starch dissolves. Next, heat up a frying pan over medium-high heat, dropping in ½ teaspoon of sesame or vegetable oil to fully coat the bottom of pan. Add cauliflower florets and tofu and saute for 1 minute. Add scallions and red pepper strips and saute for another 30 seconds. Stir the sauce again to make sure starch has not settled, then add it to frying pan, coating all the veggies. Keep cooking until sauce is reduced to a medium thick consistency. Serve over jasmine rice and garnish with sesame seeds.
