Looking for colors?  This dish has tons of Earth's best flavors, colors, and textures.  Grilled zucchini, peppers, eggplant, and onions are served alongside cherry tomatoes on a bed of chewy and hearty brown rice.  Black beans bring some protein to the mix.  All of this is served with a side of peach-plum vinaigrette that has a tangy sweetness to it you will love. If you are looking to up you lunch time meal this is a great desk lunch as it can be eaten cold or hot.  

Remove plastic cover from container and set aside any garnishes.

  • Oven: heat to 375 degrees. Bake for 15-20 minutes or until warm throughout.
  • Microwave: 2-3 minutes or until warm throughout.

Garnish and serve.
