This is a super-clean version of our classic short rib ragout.  Delicious fork-tender short ribs are slow-roasted with onions, carrots, mushrooms, tomatoes, beef broth, mustard, and herbs until filled with flavor throughout.  As a side, we serve a smooth puree of sweet potato-- because it adds a nice touch of natural sweetness to the dish, and because it's filled with vitamins (A & C) and minerals that your body needs and craves.
