Blackened Salmon with Cauliflower-Potato Mash

Everyone of us could use a little extra omega-3’s this winter-- right?  And if dry cold weather isn’t enough to make you want a tasty salmon dish, we pair our excellent (Faroe Island sourced) fish with Southwestern flavors that will remind you of the warm days that must lie ahead!  The fish is served with a light and fiber-filled potato-cauliflower mash and a side of sauteed Swiss Chard.
  • Oven: heat to 375 degrees. Bake for 15-20 minutes or until warm throughout.
  • Microwave: 2-3 minutes or until warm throughout.

Garnish and serve.
