Beef Stew with Mashed Potatoes and Garlicky Green Beans
We love this beef stew for a few reasons: it's a crowd pleaser, it's comfort food that is protein-rich and healthy, and it's so fork-tender and delicious that it disappears like magic! We use high quality hormone free beef and cook it slowly in a broth of stock with carrots, bay leaves, sprigs of thyme, and tomato paste. Then we add Yukon Gold potatoes for some filling & healthy starch action, along with some pearl onions... to be very fancy! Perfect for a Monday night after a long day of work, or for a Friday date-night in front of the fire.
Disclaimer: There may be variabilities in cooking time based on equipment used. Always test for temperature until the meal is warmed to your liking. Oven: heat to 350 degrees. Remove plastic film from the container before cooking. Set aside garlicky green beans, first heating beef and mashed potatoes for 10 minutes. Once warmed, add garlicky green beans for another 5-8 minutes or until warm throughout. Add a couple of tablespoons of water to stew if it starts to dry during the heating process.
Microwave: Remove plastic film from container and microwave for 2 minutes. Continue to cook in 20 second increments or until warm throughout. It is not necessary to remove garlicky green beans first if using a microwave.
