Herb Roasted Pork Loin with Butternut Squash and Apples

Anyone for a dinner of caramelized pork loin? Yeah, we thought so. While this dish has a slight sweetness to it and is filled with tastes of warm spices, it is free of sweeteners and completely clean. We first marinate the pork in apple cider, sage, cinnamon, date-paste, and Italian herbs. After browning it nicely and cooking throughout we serve it with roasted apples, a butternut squash and sweet potato puree, and wilted spinach. A side of apple-cider & sage gastrique brings some zest to the warm winter flavors of the dish. Our butternut squash and parsnips were sourced locally from Victory Farms, located in Hudsonville, MI. 

Disclaimer: There may be variabilities in cooking time based on equipment used. Always test for temperature until the meal is warmed to your liking. Oven: heat to 350 degrees. Remove plastic film from the container before cooking. Place container on a sheet pan and bake for 10 minutes. Check food then continue cooking for 5-10 minutes or until warm throughout.
Microwave: Remove plastic film from container and microwave dish for 2 minutes. Continue to cook in 20 second increments or until warm throughout.
