We know that some days pesto really hits the spot. Our homemade pesto is made with all the good things, but without the grease and heaviness: we grind basil, garlic, walnuts, and a touch of olive oil into a smooth, creamy sauce that you won't regret. We then stuff hormone-free boneless, skinless chicken breast with this pesto and sear it in ghee to get a delicious golden brown color. The chicken is served with a side of roasted carrots, parsnip, and tomatoes-- a nutrient and fiber filled side that rounds off the dish perfectly. Our chicken is locally sourced from Gerber's Amish Farm (Kidron, OH), our parsnips are from Victory Farms (Hudsonville, MI), our basil is from Revol Greens (Medford, MN) and our carrots are sourced from Valley Farms (Imlay City, MI). 

Disclaimer: There may be variabilities in cooking time based on equipment used. Always test for temperature until the meal is warmed to your liking. Oven: heat to 350 degrees. Remove plastic film from the container before cooking. Place container on a sheet pan and bake for 10 minutes. Check food then continue cooking for 5-10 minutes or until warm throughout.
Microwave: Remove plastic film from container and microwave dish for 2 minutes. Continue to cook in 20 second increments or until warm throughout.
