Blackened Salmon with Cauliflower Potato Mash

Everyone of us could use a little extra omega-3’s-- right? We pair our excellent (Faroe Island sourced) salmon with southwestern flavors. The fish is served with a light and fiber-filled potato-cauliflower mash and a side of sauteed collard greens. Our potato is sourced locally from Alsum Farms, located in Friesland, WI.

  • Disclaimer: There may be variabilities in cooking time based on equipment used. Always test for temperature until the meal is warmed to your liking. Oven: heat to 350 degrees. Remove plastic film from the container before cooking. Heat potatoes separately first, warming for 5 minutes. Add fish to container and continue heating for another 5 minutes or until warmed throughout. 
  • Microwave: Remove plastic film from container and microwave dish for 1.5 minutes. Continue to cook in 20 second increments or until warm throughout.

Garnish and serve.
