We love this beef stew for a few reasons: it's a crowd pleaser, it's comfort food that is protein-rich and healthy, and it's so fork-tender and delicious that it disappears like magic! We use high quality hormone free beef and cook it slowly in a broth of stock & red wine with carrots, bay leaves, sprigs of thyme, and tomato paste. Then we add Yukon Gold potatoes for some filling & healthy starch action, along with some pearl onions... to be very fancy! Perfect for a Monday night after a long day of work, or for a Friday date-night in front of the fire.
Remove plastic cover from container and set aside any garnishes. Oven: heat to 350 degrees and bake for 10 minutes. Stir food, then continue to bake for 5-10 minutes or until warm throughout. Microwave: 2-3 minutes or until warm throughout. Garnish and serve.
