Apricot Glazed Chicken and Cauliflower "Rice"

This tangy and slightly sweet chicken dish features a summery and light apricot-balsamic glaze. We apply the glaze during the baking process to keep the chicken breast moist, a little sticky, and very flavorful. The protein-packed main is served with a side of Whole30 approved cauliflower rice filled with raisins, almonds and snow peas. 

Remove plastic cover from container and set aside any garnishes.

  • Oven: heat to 350 degrees and bake for 10 minutes. Stir food, then continue to bake for 5-10 minutes or until warm throughout.
  • Microwave: 2-3 minutes or until warm throughout.

Garnish and serve.
