On The Menu: Four Dishes We Love For Fall

Fall is here! The leaves are changing colors, the decorations are out, and there is a noticeable chill in the air (at least there is at our HQ here in Chicago!). Looking to get into the holiday spirit? We’ve got the dishes for you! Curl up next to the fire, pick your favorite halloween movie (we suggest Hocus Pocus or if you’re more daring, Scream!) and dig into these dishes. 

1. Bistro Style Roasted Chicken

Homemade comfort food coming your way! Meet our bistro style roasted chicken. If you haven’t had a chance to try this dish yet, we have one question for you.. what are you waiting for? This is a Whole30 Approved feast that is sure to satisfy even the biggest of appetites. Our chicken is marinated for more than 24 hours in a blend of fresh citrus, marjoram, fennel, dijon, and garlic. Once the marination process is completed, we slow roast our chicken to a perfect golden brown with crispy skin and tender, juicy meat. This dish is served with a side of garlic roasted potatoes and carrots with a drizzle of lemon-thyme jus. 

2. Beef Stew with Mashed Potatoes and Garlicky Green Beans

Is there any dish that screams fall more than stew? This is the ultimate comfort food that is guaranteed to warm you up on a chilly night. Our beef stew is super hearty, filling, and full of flavors, making it a fan favorite for good reason. We use only high quality hormone free beef that is cooked slowly in a broth of stock with carrots, bay leaves, sprigs of thyme, and tomato paste. Pearl onions are added next, to be fancy of course! This delicious dish is paired with mashed potatoes made with ghee and garlicky green beans.

3. BBQ Chicken Meatloaf with Roasted Potatoes

Not your mother’s meatloaf! Let’s face it, meatloaf has a bad rap. We’re here to change that! We switch our meatloaf up a bit and make it with ground chicken as opposed to ground beef. This is another Whole30 Approved dish that is so good for those chilly fall nights when you want the taste of a home cooked meal without spending hours in the kitchen. Our hormone free ground chicken is seasoned with garlic, celery, onion, olive oil, and shallots. It’s served with Chef Jona’s homemade and super clean BBQ sauce that is sweetened with dates instead of sugar. Our meatloaf is served with a side of skin on garlic and herb roasted potatoes, giving you an extra boost of fiber and calcium!

4. Pork Roast with Butternut Squash, Apples and Sage

This dish is a killer combo of butternut squash and apples that reminds us exactly what’s so great about the fall season. Hello, apples! Best of all, it’s another Whole30 Approved feast for you to indulge in, guilt free. There's so many warm flavors congregating to make this dish such a winner. To start, our pork is marinated in apple cider vinegar, sage, cinnamon, date-paste, and Italian herbs. After browning, it’s served with roasted apples, butternut squash and sweet potato puree, and wilted spinach. Topping off this mouthwatering dish is a side of apple-cider and sage gastrique, for some extra zest.
