A Better Summer Salad

Posted by Erin Silva Winston on

We believe Summer is on it's way.  Snow storms are scattered from East Coast to Midwest, but it must end soon!  Our seedlings are planted, our bathing suits are out of storage, and we are working on gathering recipes for some of our very favorite fresh, hearty, healthy large salads.  Here are 5 of our favorites from around the web, voted by the Cooked team to be delicious summer standbys!

Black Quinoa Chopped Salad from Camille Styles

Tart Granny Smith apples, toasted almonds, black quinoa and a few teaspoons of cold plain yogurt make this salad truly worthy of drooling.

Light and Easy Broccoli Salad from The Kitchn

The best part of this salad is the easy, fast technique!  Throw whatever you have, broccoli, Brussels sprouts, onion, and more into the blender or food processor and pulse it into a delicious and fast summer salad.

Japanese Sunshine Salad with Carrot and Ginger Dressing from The Clever Carrot

Sometimes in the summer, nothing says self-care like citrus, strawberries, and avocado.  We love this one!

Thai Steak Salad with Sweet and Spicy Tahini Dressing from Half-Baked Harvest

Tahini must be one of the most undervalued components of a salad, but it's one of our favorites.  Throw it onto your greens to make a healthy and filling meal.  We love it with a bit of spicy oil drizzles on as well...

Romanesco Black Lentil Pilaf from Naturally Ella

Vegan, hearty, and offering earthy spice notes, this salad is a winner.  Make a little extra for a great take-to-work salad...
